Featuring:
PétNat Rosé: A Sparkling Rosé made from handpicked Syrah grapes. Naturally sparkling by use of the Ancestral Method. Our PetNat (Petillant Naturel) is bottled before fermentation is complete. The fermentation finishes in the bottle resulting in a naturally carbonated wine.
Pinot Noir Reserve: This Burgundian styled Pinot comes from hand picked grapes harvested in the Fours Corner area of southwest Colorado. A beautifully crafted wine with notes of Cherry, Cola and Caramel. It is a delicate expression of Pinot Noir, gently fermented in open top fermentors and aged for 12 months in French Oak barrels. Our Pinot Noir is unfiltered and unrefined. Only 50 cases produced.
Pairs fantastically with Beef Stew, King Salmon and Colorado Trout.
Cinsault: This lesser know Southern Rhone varietal is usually used for blending in Châteauneuf-du-Pape red wines and Provençal Rosés in Southern France. Cinsault thrives in the Colorado climate, due to the intense summer heat. It is a light, bright wine in color and on the palette, with flavors of red raspberry, strawberry, and baking spices including clove. Great to pair with SUP boarding, thin crust pizza, kale salads, and Étouffée. Try drinking our Cinsault chilled during happy hour!
Chardonnay: This full-bodied, award winning wine has light barrel notes of vanilla and butterscotch with aromas of citrus, recollective of meyer lemons in summertime, and a delicate creaminess finishing as mineral lime. 100% Chardonnay grapes sourced from vineyards in Palisade, Colorado - Colorado Wine Country. 14 days in primary fermentation, 100% malolactic fermentation, 100% French oak barrels, aged on the lees for 4 months and spends a total of 8 months barrel. Chardonnay pairs well with stone crab, roasted or fried chicken, PortaBella Leek Jack from Rocking W Cheese, Fettuccine Alfredo and Palisade Peach crisp.
